Its unique flavor, smell and texture are given by the action of salt and a drying and maturing process from 24 to 30 months of which 3 of them have been in our curing rooms.

Individual packs of 200 grs. The knuckle, the ham cuts and the vacuum packaged remains of the quartering are included in the delivery. The total yield of slicing is 42%.
