Our 100% Iberian acorn-fed hams and shoulder hams come from free range Iberian pigs. Their diet has been based mainly on the intake of natural products from the pasture itself and, during the montanera period, almost exclusively, on acorns.
Followed from birth to the final product, all our 100% Iberian acorn-fed hams and shoulder hams have undergone a purely artisan curing process, a trade that we have learned after generations of dedication.
Their unique flavor, smell and texture are given by the action of salt and a drying and maturing process of 36 months, of which 3 of them have been in our dryng rooms.
Subjected to always stable temperatures, the maturation takes place slowly, in the shade of the Arribes del Duero, and smell-tested with a needle to check their optimal condition before putting them on sale.
